The Cutest Little Pie

You can have a personal pan pizza but whats better is having a personal pan pie! I’m wrapping up my last semester of college with campaigns, projects and finals looming I needed a minute to relax. No better way to do that by putting on your comfy clothes, pouring a glass of wine, and getting some flour on your hands. I had found these adorable little pie pans while I was living in Texas this past summer and have yet to use them. Perfect time to try them out!

So as the oven pre-heated and I began to kneed the pie crust all the days’ stresses melted away just like the butter I coated the lattice with! If any of you have had a trying couple of days at school or at work or with your family (yes family can do that too, we still love em’) try out a few of these mini apple pies! or any flavor you’d like!

What you’ll need:

Pie Crust

  • 1 1/2 cups flour
  • 4 tbs chilled and cubed butter
  • 1/4 cup of water or more based on desired texture

Filling

  • 3 small granny smith apples
  • 1/4 cup granulated sugar
  • Cinnamon to taste
  • Nutmeg to taste
  • All Spice to taste
  • Cloves a pinch

Sauce

  • 1 tbs butter
  • 1/4 cup of water
  • Flour depending on desired thickness

Slice all the apples and toss them in spices. Stir in granulated sugar. Let chill in the fridge while you make the pie crust. Mix flour, cubed butter, and water until a dense dough forms.  Toss in the fridge for a few minutes. Split the dough in half, one for lining the pan and one for the lattice. Roll out one section to line the pan and spray with nonstick cooking spray prior to lining. Fill with apples. In a saucepan melt butter, add brown sugar, add water and let simmer. To thicken add flour and stir. When thick pour over the apples in the pan. Roll out the second half of the dough and cut into strips. Weave the strips in a lattice fashion on the top of the pie. Roll the edges to seal the filling inside of the pie. Brush the top with an eggwash. Sprinkle with granulated sugar for a sparkle after baking . I also sprinkle a little bit of salt over the top to enhance the flavor.
